How to make perfect rice

For all of those people who are always striving for the perfect dry rice, but are always disappointed when it is either chewy or watery, this is for you. Not all people have rice cookers or vegetable steamers, so instead of settling for soggy rice, follow these instructions for the perfectly cooked rice!
First decide on the amount of rice you will need cooked. A general rule of thumb is 1/2C per person. So for example a family of four would eat about 2 cups uncooked rice. Keep in mind rice really expands as it cooks.
Add the rice to a pot and multiply the amount of measured rice by two minus 1/4C. It sounds a lot more complicated than it really is but in fact its quite simple. Take that same family of four measurements…so since you will have 2 cups of rice…add 4 cups of water minus ¼C. So you will in fact be adding 3 ¾ C. Place the covered pot on high until the water boils. DO NOT LIFT THE LID, OR STIR THE RICE! That is the key. Once the water has been brought to a boil, turn the temperature down to medium low. Cook for 20 minutes and serve!
